Agave Nectar
Agave nectar comes from the sap of the agave plant. Although not an ideal food, it has a significantly lower glycemic index than sugar or honey. This makes it an excellent alternative sweetener since it will not cause as great a spike in blood sugar levels.
Agave nectar can be used as a direct substitute for honey in recipes. To use as a substitute for sugar, replace every 1 cup of sugar with 3/4 cup agave nectar, and reduce the liquid content of the recipe by 1/4 cup.
