Cauliflower is one of the cruciferous vegetables, which are known for their powerful cancer-fighting properties. Kale, broccoli, and Brussels sprouts are also in this family.

Choose cauliflower that is white, compact, and free of brown spots. Though rarely eaten, the leaves of cauliflower are quite nutritious and can be added to green smoothies or other recipes where greens are used.
