Coconut (Young)

Young coconuts are naturally green and larger than mature coconuts, but are usually cut down to a white, cone-shaped husk for sale in markets. They can be purchased at Asian markets and at many natural food stores. They are filled with a delicious coconut water and the inside of the shell is lined with a soft white meat. Young coconuts will last for 2-3 weeks in the refrigerator.

Coconut water is identical to human blood plasma. It has been used in third world countries to give emergency plasma transfusions when human plasma was unavailable.
